These homemade keto graham crackers are crisp, buttery, and lightly sweetened with cinnamon. They’re low-carb, gluten-free, and sugar-free, making them perfect for snacking, s’mores, or creating a keto graham cracker crust for your favorite desserts.

Ingredients
2cupsblanched almond flour
1tspcinnamon
¾tspxanthan gum
½cuppowdered sugar-free sweetener
¾cupsalted butter
Instructions
Add almond flour to a dry non-stick pan over low-medium heat, and stir constantly until flour becomes lightly browned and toasted. Remove from heat and allow to cool.
Mix cinnamon, xanthan gum, and powdered sweetener into the toasted almond flour.
Add melted butter and stir until a dough forms.
Preheat oven to 350°F. Line three 8x8” square pans with parchment paper.
Divide dough evenly between the pans, then press down evenly so dough covers the bottom of each pan - it should be about 1/8” thick. Slightly damp fingers can help with this.
Before baking, slice the graham cracker dough with a knife to perforate into about 16 squares per pan, then slice each square in half (for authentic appearance).
Bake for 7-10 minutes. Allow to cool completely in the pan. The crackers may seem soft at first but will crisp up as they cool. After cooling, cut gently along perforated lines into squares.
Notes
Recipe makes about three sheets of graham crackers with 16 crackers per sheet, so about 48 total crackers. Each graham cracker is 50 calories 5g F / 0.3g C (net) / 1g P / 1g fiber / 0g sugar.
