Preheat your oven to 375ยฐF and grab a 6-count silicone muffin pan. Silicone makes removal super easy, I like to grease it with a little oil spray just to double ensure zero sticking.

2. Blend the wet ingredients

Blend eggs and cottage cheese in a blender or food processor until smooth.

3. Combine batter

Transfer mixture to a bowl and stir in almond flour, Italian seasoning, ยฝ cup of the mozzarella, and 1 tbsp of chopped pepperoni.

3. Layer the muffins

Spoon half of the batter evenly into your muffin cups. Sprinkle about half of the remaining mozzarella on top of the batter.

4. Add the rest

Spoon the remaining batter over each muffin, then finish by topping with the rest of the mozzarella and pepperoni pieces.

Definitely! You can easily decrease the total amount of mozzarella used by not adding extra between the layers and just putting a light sprinkle of cheese on top. Another option is to use low fat or fat free cottage cheese and/or mozzarella cheese.
